My favorite experience in ICCA was Taste of Dubai, we got a chance to prepare the mis- en-place for the Miele Culinary Theatre, working 12 hours a day everyday, help out the audience while cooking together with the celebrity chef, and it gave us the chance to showcase our knowledge, talent and great bonding as we stay at the kitchen without much supervision. We took care of the kitchen as we were taught how and we owned it. Its a wonderful feeling being commended by the likes of Gary Rhodes and Aldo Zilli with our work at the kitchen.

Whats your advice for future chefs?
I have always dreamed of owning my own restaurant, I have been working for the food industry for years now and because I wanted to make things right and do things right, thats why I enrolled myself in ICCA Dubai. People say, that I'm too old for this. But for me, all people are allowed to dream big. Being a proud person, I just have to swallow my pride and told myself that I will do it.

And here I am, ready for my restaurant, after gaining the respects of many big names in the industry, after hearing them saying "I wish you changed your mind and come and work with me".

If people say you cannot do it, just say to yourself... bring it on.

How did you found out about ICCA?
It was our 4 years wedding anniversary and I bought a day course at ICCA in Satwa. Chef Vinod demonstrated how to make pizza and gnocchi by hand. He was very pleasant and had a gentle approach to teaching and made the day memorable and also enjoyable.Through this experience I realized how I missed working in hospitality and would really like to work in this area.

then applied to do the Certificate Course for both Cookery and Patisserie part-time which led me to complete my diplomas.

What made you decide to take up this course?
Ever since I can remember, I had a special place for all things sweet and baked! At the age of 13 I knew I wanted to be in the hospitality industry… but hadn’t quite worked out the details yet to that dream.

The first thing I do when sitting down at a restaurant table and have the menu in my hands, is flip the pages to the dessert section as fast as possible, because my whole entire meal will be ordered according to what I will have for dessert. I am a true Sweet Tooth at heart!

I completed a Sugar Craft course with distinction at Prue Leith Chefs Academy in South Africa. Later that same year I joined The South African Cake Decorators Guild where I started studying all the “old school” techniques to decorating and later passed my first Instructors exam. After packing up and moving countries to the beautiful, inspiring and promising city of Dubai. I decided to pursue my education, which led me to enrol part time at ICCA for their Amateur Patisserie Program.

It's really fun working in the kitchen because it gives you that kind of experience for when I want to be in an actual kitchen or in a restaurant. Its great to have that kind of experience with other chefs and all that kind of pressure, but overall, it was really fun being in the kitchen and having everyone help you with the dishes you make and getting all those flavors.
