This full-day ICCA Dubai Masterclass comprises of interactive workshop demos and tasting sessions in the application of Fruit Purees in French Pastries and Entremets using the world’s best fruit purees by the highly acclaimed and world-renowned Master Patissier Chef Jean Michel Perruchon (MOF’93).
Upon successful completion of the program, one will be awarded an ICCA Dubai Certificate of Participation in The Application of Fruit Purees in French Pastries & Entremets.
The masterclass is delivered in one (1) full day from 9.00 AM to 5.00 PM with a one-hour lunch break wherein lunch and refreshments will be provided.
All equipment, ingredients, protective gear and stewarding support provided for, along with Standard Recipe Cards for all classes.

1978 – Started working as a pastry chef
1978 to 1989 – Perfected his skills at a number of pastry shops in France including Lenôtre and Fauchon
1989 – Started Bellouet Conseil Pastry School in Paris with Mr. G.J. Bellouet
