Designed with the serious food enthusiast in mind, our Amateur Program in Cookery is a balanced and technique-driven cooking course that covers the essentials in an interactive manner. Receive hands-on training at our worldclass training kitchen to nurture your talent. Learn the fundamentals of Classical Culinary Arts and get the confidence to make outstanding culinary creations at home.

About this Course

Enjoy exciting, hands-on and action packed classes with like-minded food enthusiasts. Decipher recipes and get to explore classical to contemporary culinary preparations, with an understanding to create outstanding dishes.

Start with the basic introduction to kitchen operations, and food safety, progress to learn how to accurately read recipes, plan, prepare, cook, and plate a wide range of appetizers, main courses, and side dishes.

Qualifications and Outcome

On successful completion of the course, you will receive a certificate of completion for the Amateur Program in Cookery from the International Centre for Culinary Arts - ICCA Dubai, recognised by the Knowledge and Human Development Authority (KHDA), Government of Dubai.

Course Delivery

ICCA Dubai’s Amateur Program in Cookery is primarily available as a part time biweekly program (Tuesday & Thursday) from 9:30 am- 12:30 pm or on a full-day weekend program (Sunday) from 10 am -5 pm taking approx six (6) months to complete.

This program can also be done on a fast-track basis over a period of 6 weeks with classes 4 days a week from Monday to Thursday.

All equipment, ingredients and protective gear are provided, along with Standard Recipe Cards for all classes.

Industry Internship & Work Experience Placement Program

ICCA Dubai’s IWP (Industry Internship / Work Experience Placement) Program is an industry integration initiative specially designed for students wishing to join the industry as Professional Chefs by way of regular employment or an internship leading to work placement.

The IWP Program is separately conducted in addition to the 620 hours of intensive on-campus guided learning and training, which comprise our Professional Program.

The IWP arrangements are in the form of either regular employment to begin with, or an industry internship generally of 6 to 12 months’ duration, successful completion of which would lead the student chef to a regular work placement.

Yes, installment plans secured by local bank Post-Dated Cheques (PDC) are available to residents of the UAE. Kindly enquire at the admissions office for more details on the same.

I have a food allergy. Can I attend the workshop?

The practical component of the workshops takes place in our central kitchen lab. Therefore, we regret that we cannot accommodate students with severe food allergies at this time, due to the possibility of cross-contamination.

What is the outcome of the Amateur Certificate in Culinary Techniques - Cookery program?

This program incorporates many of the 250 essential techniques introduced in Classical Culinary Arts, apart from learning to execute standard recipes, and helps develop the confidence to create outstanding culinary creations, from a variety of delicate appetizers to scrumptious main courses at home.

Program Progression

This program also offers learning progression to a Diploma in Advanced Culinary Arts in Cookery, and successful completion of the same qualifies one to Become a Professional Chef.

Are there any minimum entry requirements?

Yes, the following are the minimum entry requirements more specifically for the Professional Program -

English Language - You are required to have a working proficiency in the English language, (equivalent to an IELTS score of 5.5) as it is the medium of instruction is in the English language.

Minimum Education - Should have Passed Year 12 or equivalent.

Minimum Age - 16 years for Residents of the UAE and 18 years for international student admissions.

Medical Fitness - Must pass a medical examination for Hepatitis B, Tuberculosis (TB), AIDS / HIV, Leprosy, and Syphilis.

Are the workshops suitable for vegetarians/vegans?

The Health and Wellness Workshops are not exclusively vegetarian or vegan. However, they are focused on showcasing plant-forward recipes.
