Sunjeh Raja - Chief Executive Officer and Director

In 2005, he established ICCA Dubai, and since then he has been leading the market in the Vocational Education Training program in the UAE. He adopted rigorous and innovative approach with an eye for detail in further developing this industry-focused training. 

He has won several notable and independent awards in the span of his career including the prestigious: Caterer Middle East Power 50 - #1 Education Influencer 2014 & 2016; PRO Chef Magazine "Training Champion" 2014. 

Started his career in Finance and Trading, has a degree in Natural Sciences and is actively associated with many regional and international culinary bodies. 

Shanaaz Raja - Course Director

Holds a Master's Degree in Food Science & Nutrition. 

She's a certified Food Safety Expert from the Royal Insitute of Public Health, UK; Certified Person in Charge (PIC) Trainer and approved Food Safety Tutor from Highfield UK & HACCP Australia. A qualified training instructor in Baking & Patisserie by City & Guilds, London, UK.

Shaanaz has been instrumental in the building of ICCA Dubai since its inception in 2005. 

Shagufta Patel - Relationships and Allied Programs Manager

With and academic background in marketing, Shagufta is also an Image Advisor, Life-Skill Coach, NLP practicioner and a Hypnotherapist. 

As passionate about food as she is about making positive transformations to people, she believes that cultures though diverse across the globe; the one thing holds common is the love for a hearty meal. 


John Elliot Marcadia - Senior Creative Designer and Web Specialist

A multimedia designer with knowledge in graphics, web design, video editing and audio.

The youngest member of the Creative Department, John hails from the Philippines and has previously worked for an events and marketing solutions company called Megamorphosis, which gave him the opportunity to work on  events for brands such as Davines Philippines and Mega Magazine (the biggest fashion magazine in the country). He has also worked for a Singaporean Company named Pink Parlour Asia.



Shruti Raj - Content Developer and PR Coordinator

A simple writer with hands-on experience in Public Relations and Communications. An ardent lover of food and with a natural flair for culinary arts, who loves to write anything and everything about food. 

With a career background of more than half a decade invested in the various communication field, including working with Nabucco Parfum Fin, Venture Communications FZ LLC and Bakery World Food Magazine.

Now as part of ICCA Dubai Digital Marketing team, she intends to showcase her professional expertise in web & print content development and food photography.
