The classic British Fish & Chips made with moist, tender fish fillets wrapped in a light batter, crispy fried and served with crunchy potato chips along with a refreshing chive & sour cream dip. Something relished and loved by both the kids and adults alike.

Corn flour

50 gm

All-purpose flour

Egg white

25 gm
Curry powder

5 gm

Salt

5 gm
Ice water

100 ml

For Chips

Potato finger

70 gm

Paprika powder

10 gm
Salt

3 gm

For Dip

Mayonnaise

30 gm

Sour cream

10 gm
Sriracha sauce

10 gm

Parsley chopped

4 gm
Lemon juice

3 gm

Chives chopped

2 gm
Salt

2 gm

 

Method of Preparation

  • Season the fish with salt and pepper, dust in the corn starch and set aside.
  • In a mixing bowl, mix cornflour, all-purpose flour with water to a slightly thick consistency. Whisk in the egg white and season with salt and curry powder and set to rest for few seconds.
  • Blanch the potato in oil for 1minute then in a baking tray season with salt and paprika powder and finish in the oven 180°c for 15minutes or deep-frying until golden brown.
  • In a mixing bowl combine the ingredients for making the dip and mix thoroughly.
  • Dip the seasoned fish into the batter to coat properly then deep fry in medium hot oil 200°c until golden and crisp. Then assemble the fish, chips, and dip in a platter and serve hot.
