Polish Ring Cassoulet

Ingredients

150 gm
Leeks, chopped
2 cupsCelery, chopped
1 cup
Carrots, diced
2 largePolish Ring Sausage, cut up in pieces
As required
Garlic, crushed
3 clovesButton mushrooms, quartered
200 gm
Chardonnay
1 cupSilverbeet, shredded
1 bunch
Thyme
1 sprig
Mixed beans
2 cans
Salt & Black pepper
As required
Method of Preparation:
- Heat up the butter in a large pan
- Add the leeks, celery, and carrots into the pan and sauté till it slightly caramelizes
- Add the Polish Ring Sausage, mix well, and let it cook for 5 minutes.
- Add the crushed garlic and continue cooking for 5 more minutes.
- Add the button mushrooms and let it cook and soften for 5-7 minutes.
- Add Chardonnay, cook and reduce it for 10 minutes, stirring in between.
- Add the shredded silverbeet greens, cover the pan, and cook for 5 minutes.
- Mix it all well and add the thyme into it.
- Mix in the canned beans, and cover and cook for 10 minutes.
- Add salt and pepper as required and simmer for 5 more minutes.
- Serve hot with a slice of bread.
